Ethylvanillin - synthetic fragrance.
It is applied to giving to products and drinks of vanilla aroma, masking and mitigation of undesirable collateral smacks and smells (for example, smack of boiling in dairy products or fat in fancy bread).
Ethylvanillin is used as cheap substitute of vanillin. Its smell is close to a vanillin smell, but by 3-4 times more intensively. Organoleptic in products with ethylvanillin the "rigid", "metal" shade which intensity depends on quality of ethylvanillin is noted.
Areas of use: confectionery industry, production of fancy bread, cake cheeses, ice cream, alcoholic beverage products, perfumery, cosmetics, etc.
Represents small white or slightly yellowish crystals, or crystal powder.
Dosages of ethylvanillin are about 4 times lower, than at vanillin.
The method of application - is similar to vanillin.
